Ingredients for the “Oat bran muffins with honey”
Rye flour – 50 g
Oat flakes (ground) – 120 g
Egg – 1 pc
Yogurt – 200 ml
Cocoa powder – 1 tsp.
Baking powder – 1 tsp.
Bran (wheat) – 3 tbsp.
Honey (sugar, fructose syrup – to taste) – 1 tbsp.
Curd (filling) – 200 g
Dried fruit (figs, apricots) – 1 piece
Chop oat flakes.
Add sifted rye flour.
Mix cocoa, bran and baking powder.
In a separate bowl mix the yogurt and egg, add the sweetener.
Mix with dry ingredients.
Make the filling.
Rub the curd with vanilla, add chopped dried apricots and figs, cottage cheese with a spoonful of yogurt. Mix well.
Put the dough in forms.
Laid the curd on top and close with the remaining dough, you can decorate the top with walnuts if desired.
Bake in a preheated to 180 degrees C (356 F) oven for 15 minutes.

Honey-chocolate cupcakes with bran
Eggs 3 pieces
135 g honey
50 g of sunflower oil
1/2 of lemon
skimmed milk – 50g
powdered bran – 75 g
cocoa powder – 40 g
Take 3 eggs. Separate the egg yolks from whites. Squeeze the juice of half a lemon. Mix the yolks, add honey, 2.5 tablespoons of oil, lemon juice, 4 tablespoons of cocoa. Mix again. Mix the ground bran (7 table spoons) (bran can be any – oats, wheat, rye) with 2 teaspoons of baking powder and 1 packet of vanilla. If bran is unsalted, add a pinch of salt. Pour the liquid mixture into the dry one. Mix gently. Mix 3 whites, gently put in the dough. The dough should be like thick cream. If it looks thickish (depending on bran) – add milk. Immediately bake. You can use silicone molds for cakes (muffins). Sprinkle forms with warm water. Fill each on 2/3 with the dough and place in the oven (preheated to 180 C (356 F)) for 30 minutes. Readiness you can check with a wooden stick. Cool down in the forms for 5-10 minutes and remove.
Muffins with oat bran
1/4 cup of oat bran,
1.5 cups of flour
2 teaspoons of baking powder,
1 teaspoon of ground cinnamon,
1/4 teaspoon of salt (preferably sea),
1 cup of low-fat milk,
1/3 cup of honey
1 egg (with lower cholesterol instead of 1 egg you can take 2 egg whites)
1/4 cup of olive oil
1/2 cup of raisins.
Preparation: In a bowl you mix oat bran, flour, baking powder, cinnamon and salt . Egg and honey put in milk, mix well with a fork or whisk. Put butter in the milk mixture. After that, pour the mixture into the bowl with the dry ingredients, add the raisins, stir batter (do not stir too vigorously, let the dough will be lumpy, or cupcakes will be too tight). Lubricate molds for cupcakes. Put the dough in them ( 2/3 of the form for medium cupcakes and almost full for large muffins) and bake at 190 0 C (374 F) for 25 minutes until the muffins will not have a brownish tint or check if the toothpick, after piercing the cake, remains clean. Put one form with water near cupcakes so you will not burn them and have wet ones. Pull out the cupcakes from the oven and leave in the forms for 5 minutes to cool down a bit. Then remove from the molds and leave to cool. You can get 12 muffins.
